🌿 The Distinctive Flavor of Central Highlands Coffee in Vietnam ☕️

Vietnam is one of the world’s leading producers and exporters of robusta coffee, with an annual output of nearly 2 million tons of green coffee beans. More than 90% of Vietnam’s coffee area lies in the Central Highlands, where the coffee trees thrive on fertile red basalt soil at altitudes ranging from 450 to 1,000 meters above sea level. This region enjoys a tropical monsoon climate with about 2,500 mm of annual rainfall, clearly divided into two seasons:

  • 🌧️ Rainy season: from May to October, accounting for about 80% of the total yearly rainfall.
  • ☀️ Dry season: from November to April of the following year.

Over a century ago, the French brought coffee to the Central Highlands. Since then, the crop has adapted perfectly to the local environment and become the region’s signature product. Coffee cherries are harvested from November to December, which coincides with the dry season — an ideal time for drying and processing.

After harvest, the trees enter a two-month dry period to form flower buds. Around February, when the buds mature, farmers start irrigating the coffee plants. After sufficient watering, the trees burst into full bloom with brilliant white flowers — a breathtaking sight across the highlands.

🌸 Coffee blossoms are also the most valuable honey source in the region. March marks the season when bees collect nectar, and many beekeepers from all over Vietnam move their hives to the Central Highlands to harvest this unique coffee blossom honey, while also helping pollinate the flowers for a better yield.

As the fruits begin to set, the rainy season returns, and farmers focus on fertilizing and nurturing the coffee cherries. Most plantations in the Central Highlands now follow international standards such as 4C, UTZ, RA, and organic farming. About two months before harvest, farmers stop fertilizing and using pesticides, ensuring high-quality and safe coffee.
